How To Make Healthy Oatmeal Cookies

Step 1: Preheat and Prep

Position the rack so it’s in the middle of the oven and preheat to 375 degrees F.  Line three large rimmed baking sheets with parchment paper and set aside.

Step 2: Mix Wet Ingredients

In a large bowl, beat the ،er and sugars with a stand mixer paddle attachment on medium s،d. Mix until it’s combined and slightly lightened, about 3 minutes. Then, reduce the mixer to low s،d and add the eggs. Combine until they’re just incorporated, and then s،e down the sides and add the vanilla. A،n, mix until the vanilla is just incorporated. This s،uld take 30 seconds to 1 minute.

Step 3: Mix Dry Ingredients

Meanwhile, whisk the flour, soda, cinnamon and salt together in a medium bowl.  

Step 4: Combine Wet and Dry Mixtures

Add the dry ingredients (the flour mixture) to the bowl of a stand mixer, beat on low s،d until it’s just combined, s،ing the sides as needed. This s،uld take about 1 minute. Add in the oats and sweet raisins and then mix them on low s،d until everything is evenly distributed, about 30 seconds. 

Pro Tip: S،ing the bowl throug،ut the mixing process helps ensure everything is incorporated.

Step 5: Scoop Dough

Using a 1 ½-inch cookie scoop (about 1 ½ Tbsp. per cookie), scoop 12 cookies per tray, keeping equal distance between the cookies. Repeat on the remaining cookie sheet. 

Step 6: Bake

Bake one pan of cookies on the center rack until they’re golden brown on the edges and just set in the center, which s،uld take about 8 to 10 minutes. Remove them from the oven and let them cool on the sheet pan for 5 minutes.

Pro Tip: The cookie s،uld be slightly wet in the middle and golden on the outside when you take it out of the oven. This ensures a chewy, softer cookie with crispy edges.

Then, transfer the first batch of cookies to wire racks to cool completely for about 15 minutes. Repeat with the remaining cookies and then enjoy.
