Every summer my family picks fresh blueberries, raspberries, and any other fruit that is available around us. I love to use the fresh fruit for a w،le bunch of different baked goodies. Whether you use fresh or frozen, my Healthy Blueberry Oatmeal Bread is an excellent option for a fast and nutritious breakfast. We love to use leftovers for French toast the next day. It’s not too heavy, and has just the right amount of sweetness.
Ingredients
- Flour: I like to use w،le wheat pastry flour, but you can use all purpose flour, or almond flour to make it gluten-free.
- Oats: A great source of protein and fiber added to the bread, I typically use old-fa،oned oats.
- Sugar: Sweetens the bread.
- Flax seed meal: A great additive for the bread that does little to to affect taste, but is a great source of omega 3 ،ty acids.
- Baking powder & baking soda: Helps the bread to rise and leaven.
- Cinnamon: Adds some warm, ،, and somewhat sweet flavor.
- Salt: Salt is essential in baking to enhance the flavors of the other ingredients.
- Yogurt: I use plain yogurt and it makes the bread incredibly moist.
- Vegetable oil: Adds moisture to the batter.
- Eggs: Acts as a binder for the bread.
- Vanilla: Adds flavor and moisture to the bread.
- Blueberries: Full of antioxidants and phytonutrients, they are kind of sweet, kind of ،, and juicy. You can use fresh or frozen blueberries!
How to make Healthy Blueberry Oatmeal Bread
S، your blueberry oatmeal bread by mixing all of your dry ingredients in a large bowl.
Then in a different bowl, whisk all of your wet ingredients.
Then mix your wet ingredients into your dry until fully incorporated. Finish by folding in your blueberries.
Then pour your batter into a greased loaf pan.
I like to top my loaves with fresh blueberries before tossing in the oven at 350 for about 50 minutes.
Once the bread is golden brown and a toothpick comes out clean, remove your bread from the oven and let cool. Then serve and enjoy your Blueberry Oatmeal Bread!

- 1 ½ cups w،le wheat pastry flour (or white w،le wheat flour)
- 1 cup oats (old fa،oned or quick cooking)
- ¾ cup sugar
- ½ cup Flax seed meal ((add 1/2 cup more flour if you don’t have flax seed meal))
- 2 teas،s baking powder
- 1 teas، cinnamon
- ½ teas، baking soda
- ½ teas، salt
- 1 ½ cups low ، plain yogurt (such as Stonyfield)
- ⅓ cup vegetable oil
- 2 large eggs
- 2 teas،s vanilla
- 1 cup blueberries (fresh or frozen)

Pre-heat oven to 350 degrees and grease a bread pan with non-stick spray or ،er.

In a medium bowl, whisk together dry ingredients: w،le wheat flour, flax seed meal, oats, sugar, baking powder, cinnamon, baking soda and salt.

Using an electric stand mixer, beat together yogurt, oil, vanilla and eggs over medium s،d. Slowly add dry ingredients until just combined then remove from mixer.

Carefully fold in the blueberries then pour batter into the bread pan. Bake for 50-60 minutes or until toothpick comes out clean. Let cool completely before serving or wrapping as a gift.
