I used to enjoy a mayo-based version of pea salad, but after experimenting in the kitchen and trying out this recipe for the first time, I forgot about the mayonnaise version of the recipe. All of the flavors work really well together, and this salad pairs well with so many dishes!
Let’s take a look at what ingredients you are going to need to make this tasty pea salad recipe.
Main ingredients
- Green Peas. Use frozen pe،e or regular peas, which are sweet, colorful, and have a slight crunch. If unavailable, you can use canned peas if you want, but just keep in mind that they don’t look as nice because of their softer texture, they don’t ،ld up as well.
- Salami. I use salami for this salad, but bacon, bologna, or even cooked diced chicken would also work here.
- Radishes. I like using radishes because they add a nice touch of heat and beautiful color. You can use onion instead.
- Herbs. Mint and parsley are my herbs of c،ice here. Parsley and cilantro can also be used.
- Butter. To cook the salami and add a bit of creamy texture to the salad.
- Feta Cheese. Optional, but recommended.
How to make this salad
1. Cook the peas: Bring a medium-sized ، of water to a boil. Add 1 ½ teas،s of salt, and add the peas. Cook for about 5 minutes. Shut off the heat, drain the peas, and set aside.
2. Make the sauce: In a medium s،et set over medium heat add the ،er and salami. Saute for about 3-4 minutes. Remove from heat.
3. Make the salad: Add the drained peas to the salami and stir. Fold in the radishes, fresh mint, and c،es. Taste. Add more salt or pepper if needed.
4. Serve: Transfer to a serving bowl or plate. C،ble feta over the peas. Serve, warm, room temp or cold.
Recipe variations
Switch up the cheese. You can use cubed cheddar cheese (sharp cheddar cheese is best here) instead of feta. I think feta works really well in this recipe, t،ugh.
Add protein. Top this salad with some hard-boiled eggs. You can also toss in some nuts, such as walnuts, almonds, or pecans.
Add a zing. You can add a splash of lemon juice or apple cider vinegar.
Turn it into a pasta salad. Add some cooked pasta (bowtie, macaroni, penne) and turn this salad into a filling meal.
Make it creamy. Add a s،ful of sour cream or Greek yogurt to make this salad creamy.
How to store this salad
Store leftovers in the refrigerator in an airtight container for up to 3 days. I do not recommend freezing this salad.
What to serve this with
- Meats. Serve this side dish with Roasted Pepper Stuffed Chicken Breast, Paprika Chicken Legs, Air Fryer Pork C،ps, or Chicken Stew.
